PALAK PANERR IN RICH NUT GRAVY

WE LOVE PANEER A LOT AND ADD LOADS OF THEM IN MY PANEER DISHES..HOWEVER YOU MAY REDUCE THE QTY A BIT IF YOU PREFER LESS!ITS RICH NUT GRAVY IS SCRUMPTIOUS AND GOES WELL WITH ALMOST ALL INDIAN BREADS.










INGREDIENTS:-




1) Amul Paneer(Sliced) --400 gms


2)Palak boiled and ground to a paste--1 cup


3)Onions sliced -- 1/2 cup


4)Cashew nuts--1/2 cup





5)Onions chopped--1 cup full( 8 oz)


6)Ginger garlic paste--3 tblsps


7)Chopped tomatoes--4 medium





8)Coriander powder--2 tblsp


9)Chilli powder--1/2 tblsp


10)Cummin powder-1/2 tsp


11)Garam masala--1 tsp


12) Kasoori methi--1 tbsps





13)Tomato sauce--1tbsp


14)Salt.





METHOD:-


Soak the cashew nuts in 1/2 cup water and keep aside..Heat a little oil in a frying pan, and slightly cook the 1/2 cup sliced onions .. No need to wait till it turns translucent..Keep aside to cool down..Now grind the soaked cashew and the cooked onions together with some water to a smooth paste.Cover and keep aside again.




Heat a little more oil and fry the ginger garlic paste .. Add the chopped onions and saute till light brown..Sprinkle the powders(8-11) and keep stirring over low flame till the raw smell disappears.. Add the chopped tomatoes and fry till oil separates..Now add 2 cups of water(or a little more if needed),salt and add the paneer.. Cook till the paneer is done.. Stir in the palak paste , kasoori methi, and the nuts N onion paste..Cover and cook again for a few more minutes.. Stir in tomato sauce..Serve hot with chapathies, bhatturas or butter nans .
