KARIMEEN POLLICHATHU
INGREDIENTS:-
Karimeen-- 3 large(almost 1kg and 300 grams)
Sliced button onions--2 cups
Ginger garlic paste--2 heaped tablespoons
Coriander powder--3 heaped tablespoons
Kashmiri chilli powder--1 tablespoon level
Garam masala--1 tsp
Turmeric powder-1/4 tsp
Tamarind paste-1 tablespoon or as needed
Coconut oil-1/2 a cup
Thick coconut milk-1/2 a cup
Salt.
A few sprigs of curry leaves, and a tomato rose to garnish while serving
METHOD:-
Clean the fish and make slashes on either side..Keep aside.. Heat coconut oil in a pan and saute the sliced button onions and some curry leaves till slightly brown.. Make a paste of the masala powders with a little water..Add the ginger-garlic paste to the onions followed by the masala paste.. Saute well till the raw smell disappears and the oil starts to separate..Now add the tamarind paste and salt.. Mix well and remove from the pan.. Into the same pan lay a sheet of banana leaf.. Spread half the masala.. Arrange the fish over it.. Spread the remaining masala and make sure that it coats the fish very well..Now pour half a cup of thick coconut milk over the fish.. Sprinkle some more curry leaves...Lay another piece of banana leaf to cover the fish.. Now close the the pan with the lid and cook till done.. Shake the pan lightly half way thru.Serve hot garnished with a few sprigs of curry leaves, split green chillies, and a tomato rose.May use with plain bread, chapathies, parottas or rice.(If desired you may use fried sliced onions and fried curry leaves to garnish.)

CHERRY COOKIES
This is an easy to make cookie recipe, that i have tried out several times.
INGREDIENTS:-
Plain flour----2 cups
Softened unsalted butter ---1 cup
Sugar...1/2 cup powdered
Vanilla essence--1tsp
Chopped cherries-----1/4 cup(Glazed cherries washed and dried)
METHOD:-
Mix all the ingredients well and roll out using a little flour if needed..Cut into shapes using a cookie cutter and arrange on a cookie sheet...Bake in a preheated oven till done and crisp.(170 degree).May take about 25 minutes.
TIP:-..Do not roll out too thinly.Butter should be soft but not melted.
